What I Do with my Berries in the Summer


Dear Friends,

It is a very berry season now. We see colorful strawberries, raspberries, blackberries, boysenberries, currents, and may others at the markets, in the wild, and in our back yards. They are vibrant in colors and exceptionally rich in nutrients. This is the time to load up with their antioxidants. However, if you buy more than you can consume in a day, the fruit flies try to consume the rest. We offer you one way of eating more berries in the summer. Accept a good deal at the market and buy the whole flat. Eat as many as you can and turn the rest of them into delicious green pudding that won’t look green, but rather purple.


Summer Berries

Very Berry Green Pudding
  • 4 cups total of any combination of strawberries, blackberries, raspberries or any other berries
  • 2 cups kale leaves, stems removed (or any other leaves)
  • ½ cup raisins
  • 2 bananas
  • 3 cups water
  • 2 tablespoons psyllium husk powder

Note: Add psyllium husk last after all other ingredients have been blended thoroughly. Add psyllium through the top of the lid while blender is still running. Once the psyllium is added, the smoothie will get thick quickly, so have containers ready to empty blender contents into.

Yields 6 cups
