Rainbow Salad
This may well become your favorite new salad, with its fragrant herbs and crunchy veggies.
Ingredients:
½ red cabbage
2 medium carrots
½ bunch dill
¼ red onion
1 red bell pepper
2 tablespoons lemon juice
2 tablespoons olive oil
½ teaspoon salt
1 sprig of mint (for decoration)
Instructions: Thinly slice the cabbage, grate the carrots, chop the dill, slice the bell pepper, and mix these ingredients up in a large bowl. Add in the lemon juice, olive oil, and salt. Mix thoroughly. Decorate with mint.
