Valya’s Kale Chips
These crunchy green chips are easy to make and are a healthy alternative to store bought chips.
Ingredients:
2 bunches green curly kale
1 red onion
½ bunch cilantro
½ cup brazil nuts
5 cloves garlic
1 lemon, juiced
7 kelp fronds (or sea salt to taste)
1 cup water
Instructions: Strip the kale from its stems, tear the leaves into bite size sections, and place the leaves into a large bowl. Chop up half the onion and add it to the bowl of kale. Place the cilantro, the remaining half of the onion, the brazil nuts, garlic, lemon juice, kelp/salt, and water into a blender. Blend thoroughly. Pour the mixture over the kale leaves and chopped onion, and mix it in evenly with a large spoon. Next, spread the seasoned kale leaves onto dehydrator trays and dehydrate at 105F overnight or until crunchy. This recipe is perfect for a 9-tray Excalibur dehydrator, although you will have to use every other tray, because the chips are quite tall. Once dry, store the chips in an airtight container to keep them crunchy.
